Bacardi Marinated Garlic

Recipe for:

Whole garlic cloves marinated in Bacardi and olive oil


  • garlic cloves, peeled 500g
  • white wine vinegar 330ml
  • extra virgin olive oil 330ml
  • Bacardi rum 330ml
  • salt 1.5tsp
  • Madras curry powder 1.5tsp
  • optional sugar 1.5tsp


  1. In a stainless steel (or other non-reactive) pan, mix all ingredients, except garlic.
  2. Bring to a soft simmer, until everything is dissolved.
  3. Add garlic.
  4. Continue simmering with lid, for 5 minutes.
  5. Place everything in sterlised jar(s). Close tightly with lid.
  6. Store for a minimum of 1 week before consumption.


Storage in multiple small jars is more convenient, and removes the possibility of spoilage in one big jar.
